Creamy Spinach (&Tomato) Tortellini

 Creamy Spinach Tortellini
amazing. mouthwatering . incredible.
warm. satisfying.
"can't wait to make it over & over again" kind of recipe.

Ingredients
1 pkg (16oz) Frozen Cheese Tortellini
1 Small Onion, chopped
2 Tbsp. Olive Oil
3 Garlic Cloves, minced
1 can (14-1/2 oz) Diced Tomatoes, undrained
1 pkg (10oz) Frozen Chopped Spinach, thawed & squeezed dry
1-1/2 tsp dried basil
1 tsp Salt
1/2 tsp Pepper
1-1/2 Cups Heavy Whipping Cream
1/2 Cup Grated Parmesan Cheese
Additional grated Parmesan cheese or mozzarella cheese, optional

1. In a large skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer.
2. Add the tomatoes, spinach, basil, salt & pepper. Cook & stir over medium heat until liquid is absorbed, about 3 minutes.
3. Stir in cream and cheese. Bring to a boil. Reduce heat; simmer, uncovered for 8-10 minutes or till thickened.
4. Meanwhile, cook tortellini according to the package directions...I suggest getting your water ready & heating while you work on steps 1,2 & 3.
5, Drain tortellini, toss with sauce. Sprinkle with additional cheese if desired.

 Soooo delicious!
I made this Friday for a friend who came to visit me. She & my husband both LOVED it! I HAD to share it will you...shoot, if I could force feed it to you I WOULD! It's SO good!
My mouth is watering right now - no lie.

  2. Thank you Linda! You're right,it SO is. My 4 year old thinks it's fun to call it sea-weed...hahaha. As long as he eats it & enjoys it, that's what matters to me :)
